Was just wondering if we sent out offers to watchers, does the selling dashboard show whether our offers were denied by the watcher?? Thanks

It appears the answer is no, you need to dig to find it in "review offers sent"

So you don't know if the potential buyers deny the offer? REason I ask cause I think I remember as a buyer doing just so and denying the sellers offer when it came to my inbox. I would think the seller would be given the feedback he/she sent instead of them just expiring....

As I stated you can go to the individual listing and use the dropdown to view "review offers sent". Here you can see if an offer has been declined or, in most cases, ignored.
The reason I would prefer that a notification be sent is because buyers are given the opportunity to comment on the offer and this is sometimes valuable in adjusting price or future pricing considerations. I've received some good feedback from buyers and other, not so valuable feedback.

Agreed... I've seen the reply form for offers received which usually (but not always, for some reason) includes a text field where you can explain why you are declining the offer. So I assume that the seller can see that (and I've always wondered whether your reply will identify you to the seller; I assume not), but eBay notifications or alerts in general are rather flaky at best, so whether the seller will be alerted to a declined offer or will have to deliberately go and find it is unclear. I don't send offers myself very often.
I have to admit that it is sometimes really tempting as a prospective buyer to say why, in cheerfully nasty terms, I am declining their offer, usually because their starting price is just ridiculous for the item, and/or because the minimum 5%-off that eBay requires for offers to be sent is... also... just ridiculous. But I am more diplomatic than that. 😇

Yes, I'm aware of the offer review section, but I couldn't tell if the offers where being ignored or denied as they all are active, but don't seem to have any activity.

I've actually commented before that I was just looking at what the competition was charging. I try not to click twice, which triggers automatic offers for sellers that have that enabled, but sometimes forget.

After some time thinking about this and watching the section in question named "sent to interested buyers" in the offer management section...I don't think anything changes in that section. Just the amount I offered to them and the days left till the offer expires.
So in this event, even if they decide to ignore or deny the offer, nothing will show up as a response.
