We used to be able to show/hide features with the old form, but that feature was missing from the new advanced listing tool. eBay finally added it to the new tool!
Not sure when it went live but I just noticed it today and I'm so happy to be able to hide a few of the options that I don't need.
There is text that says "any changes you make won't affect drafts or listings you already created using these fields", so if you use "sell similar" you'll have to change the settings each time you sell similar from an existing listing -- which is rather frustrating -- but at least the preferences will stick for newly created listings.
