I'm new to ebay and have been trying to sell some toys no longer in use, specifically legos. I have seen several listings of Lego Minifigures specifically that give you the option to pick and choose which figures you would like to purchase.
After reading ebay articles and watching a couple of you tube videos, it appears that option appears for ebay categories that allow for variations. It does not appear that Toys & Hobbies / Building Toys / Legos is a category that allows the variation.

When I select "Buy Now" as a selling option and change the quantities to multiple, the variation option does not appear. My question is, if this doesn't appear like a option that is available to Lego sales, how are so many others able to list lego's in this manner? Alternatively, if I'm missing something on how to properly set this up as anoption, any guidance would be greatly appreciated!

You have to list them in Lego Building Toys - Minifigures.
Also you have to start the listing from scratch (no sell similar).
The variation option should be on the listing form if you're using the advanced listing tool

Also, many potential customers hate variation listings and will not click on them. This is because the variation the thing they searched for is invariably sold out in the variation, is terribly overpriced or the variation listing is seeded with a low priced junk item that no one would buy.
They are also much more difficult to manage and update than normal listings.

First thing: variations are not supported on the app. Make sure you're using the website. Variations are not supported for auction format listings; make sure you're using fixed price.
By default the variation setting is hidden on the listing form. Once you unhide the setting it will stick for future listings.
On the top right of the page click the settings menu (3 vertical dots) and toggle the variations slider if it's not already on.
Make sure you're working off a new listing, not a relist or sell similar from a listing without variations.
Beyond that it comes down to category; not every category supports variations.
If the category supports variations you'll find them in a non-intuitive, awkward placement on the listing form - below item specifics instead of above them. Make sure you set up variations before you fill out any of the IS.

While that may be true for a lot of variation listings, Lego minifigures are a different ball game. Most are sold in variations for a particular series.

Legos are a "hot" sell on eBay.
I suggest selling them individually unless they are not as popular.
I play with legos with my 4 cousins and wish I had some of their legos to sell.
And I suggest only domestic selling because the market is rather strong on them.
