The COA for an item I sold is issued to me in my name; do I send this to my buyer as is or can I cover up my name and the numbers listed below it? (I'm assuming it's my account number but it is super long). Thanks

I would send it unaltered.
It would be harmless for your buyer to know your account number. They don't know your credit card number, expiration date or 3 digit CCV security code.

Did you mention that a COA is included?
If so, I would send it unaltered, unless it includes specific personal information, that might be used in the wrong way.

The buyer will likely already have your name and address from the shipping label and packing slip.

I don't use my name or my address on my labels. I use my screen name and the post office address for privacy and security reasons.

I didn't say it was included, but it is included in the photo section of the listing, with my name obscured.

To wrap up the issue: I contacted buyer and she says she doesn't really want or need the COA, that she believes the item is authentic based on the photo of the COA in the listing. I told her I could always send a photo of it if she ever wants it. Thanks for your responses, everyone!
