Until that offer lapses you can't change the listing. That would be completely unfair to your potential customer.
For example, lets say you did change the listing. Maybe added something about a defect you found in the product and you wanted to be clear about it.
Before that change the buyer had viewed and liked the listing enough to send you an offer on it or they were watching the listing and you sent them an offer. Typically a buyer is going to accept your offer, they don't go an re-read the listing for any changes that may have happened. And it wouldn't be reasonable to think they would.
So you will just need to either wait or if the change you need to make is significant enough, then close the listing so the buyer can't even accept the purchase. Correct it, repost it and then let the potential buyer know you have listed it again but with some changes that they should review.

It's the same reason you can't modify an auction listing after it has a bid. Both the bid and the make an offer are based on the listing as it is at the time of the bid/offer.
