I have had two bids “canceled” in the last week with no reasoning and I have never had this happen before. I was under the impression that when a customer clicked that confirm button they were committing to buy. What is going on with eBay these days? Is this something new? Please let me know if anyone has any information.

I don't do auctions, but I would rather have them cancel their bids, then to wait and win, then want to cancel the order.

Nope.
Been going on since 1995.
The customer is supposed to leave a reason, but really his reason is he doesn't want it and he won't pay for it.
A cancelled bid is a deadbeat you don't have to chase down with an Unpaid Item Dispute.
Small mercies.
Now if a winning bidder is asking to cancel, that's different.
You are allowed to cancel, for the exact same reasons I gave above, or to refuse.
EBay has moved to automatic UID and Strike after four days (I'm not clear on the details of this new policy) if you don't agree to cancel. The deadbeat cannot leave feedback.
You can set up an automatic Block of deadbeats with Strikes in you Seller Preferences/Buyer Requirements.
You can switch from the dying Auction format to Fixed Price.
You can add Immediate Payment Required to your Fixed Price listings.

Cancelled?
Do you mean a bidder retracted a bid before the auction ended? Or do you mean the bidder asked you to cancel the transaction after s/he had won the auction?
Those are two distinctly separate actions, and it's important to be clear about which you mean in order to answer your question.
Bidders may retract bids before an auction has ended. Bidders may ask a seller to cancel an auction win--and sellers may accept or decline the cancellation.

And eBay may also cancel a bid if they suspend or ban a member, in which case the OP should be glad they did.

Bidders are only supposed to do that for a very few and rare reasons. However, it they no longer want the item, it's better they do that than file a false not as described case to return it on your dime. Place them on your blocked bidder list.
