Buyer bid $100 over my asking price, I countered for my asking price and was accepted. Then the buyer asked me for my paypal email address so they could pay vs going through the normal payment through ebay. I am getting a very uneasy feeling about the sale. It's been 10 hrs and they have yet to pay for the item. So, do I have to wait 2 days for no payment or can I cancel the sale now?

That can harm you, harm your ability to sell here.
you file the Unpaid Item Dispute with eBay....
if they dont' pay (and you Don't See the Payment in your Paypal balance)
They're gonna send you a Fake email, looking like it was from Paypal
lying that they paid and that it's ok to ship. Common scam.

Buyer is not a legit buyer.
No one offers more than the listed price except to run a scam.
You were asked for your PP address so they could send you a fake, but very real looking, You've Been Paid Now Ship email.
10 hours is really nothing but a minor annoyance if they intended to pay. So yes, wait the 2 days to file the Unpaid. Follow procedure. Even though you know he'll never pay, you have no eBay sanctioned reason to cancel and to do so would give you a defect.
You're new with no selling experiences (if this is the ID you used to list). You will be a target for scammers - espeically on electronics, phones, or other high-priced items that they can flip on the streets for a few bucks.
List Fixed Price - No Best Offer - Immediate Payment Required.

Was this a FixedPrice or an Auction listing?
If it was an Auction,
- it is not unusual for an impatient bidder to make a higher offer, thus beating out other bidders, most of whom will not bid until the last moment.
- the higher bid often means that the bidder knows the item will go for much more and gets in early before the seller is aware of that
- the usual target is a new seller, unaware of the sketchey (but legal) moves that some pull.
If it was Fixed Price (like 85% of listings) there is NO reason to offer a higher price.
- the first part of the scam was to get your email address. Change your passwords.
- only ship if you see payment in your Paypal account.
- only go to your Paypal account from your own bookmark, not from any email
- be aware that both buyer and seller can manually mark an eBay sale as Paid*
- Fixed Price listings do get Best Offers which are always for LESS than the asking price.
So basically, we have all the earmarks of a SCAM
Wait for 96 hours (48 if you are in the USA) then open an Unpaid Item Dispute in the Resolution Centre at the bottom of this page.
Ignore the suggestion that you contact the Buyer, you've already done that.
Ask eBay to step in and Close the Claim after 96 hours.
Put the bidder on your Blocked Bidder List.
In your Seller Preferences/ Buyer Requirements, add an automatic Block on bidders with Unpaid Item Disputes. **
*Because some sales are cash on pickup. Not necessarily a problem.
** There are other Blocks which you can consider.
