Can I open ebay store on ebay.com while I live in Greece?
And is it worth it?
I have 700+ listings and 2500+ usd sales per month.

Yes, anyone can open a Store on .com
at $2500/month the lower final value fees alone would cover the cost of a Basic Store and the included listings would be essentially free.
If you want to consistently run about 700 listings then a Premium Store would be a better option.
If you are currently paying listing fees on listings over and above the 50 free then having a Store is pretty much a no-brainer.

A little trick we international sellers have learned , that US -based sellers have not taken up. ....
You can upload the same number of listings to dotCOM (here) as you can to eBayGreece, or eBaydotDE or eBaydotCA (Canada).
If you choose a Premium store that allows you 1000 "free" listings, you can list another 1000 free on another site at no more charge.
Note that when you list on dotCOM (or any site that is not your own home site) you must list in US dollars and you must use Flat Rate Shipping.
The Location must be the location of your goods, not your own. So if you warehouse in Greece, the Location is Greece. If you are dropshipping from China, the Location is China, etc.

Neither!
You will need a Greek PayPal account, I have no idea what they might or might not report to your tax authorities but there will always be a paper trail if someone is inclined to investigate.
