I am new to Ebay. I listed about 20 auctions.
Out of 4 ended auctions, 3 have been bidders who contacted me making a good offer that I accepted. I sent them invoices. All have 0 feedback (but so do I, having just started.) All three contacted me asking me to email them outside of Ebay so they could "get online and pay, etc."
Is this normal? So far, I had to cancel the sales for 2 and assume I will end up cancelling the 3rd.
Any insight would be appreciated, because if this is all I am going to get by way of sales, I won't waste any more time listing.

No, it's not normal. Never communicate outside of Ebay, it's usually a scam. You are being targeted b/c you are a new seller. Hang in there, it will eventually stop, esp since you're not selling high scam items.

ANYTIME a buyer (unless you know them well) asks you to contact them outside of eBay it will be a scam.
If any buyer asks you to send them an invoice (unless it's to provide a combined shipping discount) it will be a scam.
If any buyer asks for your payment information (PayPal), it's a scam.

Forgot to mention.......the scammers love Auction listings and they are attracted to low/no feedback sellers.

Are you saying you are listing at auction but just taking offers and not even doing auctions? Very bad idea so please stop doing that. You are ruining the auction format as they are intended to let bidders bid all the way through to the closing time. Just list using BIN instead.

Nonsense - he is not ruining anything. Ebay allows Make Offer on an auction. It usually goes away if bids are received first.
In this case the listings dont look like they really need to be auctions as they are not rare or hot properties. I would just list them as Fixed Price with Immediate Payment Required. That will stop the Please Call Me scammers because they cannot buy without an actual payment first.

SCAM!!
If a member even mentions the word "text" stop communicating and Report them to eBay.
If they do not pay within four days of purchase, eBay will automatically cancel the listing.
Unfortunately for new sellers, even those cancelled transactions count against your monthly quota.

Have you set your parameters for buyers? Blocking buyers who basically don't pay.
Just don't read ANY emails outside of ebay messages. You need to do some heavy research on scammers if your going to continue selling coins. You can also refuse returns on bullion. Plus, if someone tells you that they did not get a item that shows delivered. Do NOT refund them. If they file a case, upload your tracking and tell them you did your part, and it shows delivered. They need to file a complaint with USPS, not you. This will probably be tried on you since your new.

If you list something on Ebay, you should only communicate on Ebay. Its fine to just ignore people when you best interests isn't involved.

If you want to avoid this then list items buy it now with immediately payment required. Scammers love to play with new sellers on auctions. They send you emails through eBay’s system telling you they will pay you outside of ebay. This is blatantly against ebay rules because if you participate in this as well as them ebay get’s no cut out of the item. There is NEVER any reason for a buyer to ask to PAY YOU OUTSIDE OF EBAY’S SYSTEM. All of that is a scam attempt where they get you to send the item and then send you a fake payment.

Your problem is not with listing, your problem is with accepting offers.
On eBay, only a Buy It Now requires a buyer to pay immediately. Bids and offers do not.
So if auctioning items and accepting offers are the issue, IMHO you should avoid auctioning items and accepting offers.

If they file a case and you have not uploaded your tracking already then it is too late. Ebay will not honor your proof of tracking if the buyer has already opened an INR. You need to upload the tracking when you ship.

Never reply. Block them and report their scummy scamming to eBay. Not that eBay will do anything about it 😞
