If an item sells on Sunday and the handling time is 5 business days how can the delivery window be that same Thursday to following Tuesday?
Seller would be penalized for late delivery but this doesn't make sense.

Are you looking at your own listings and seeing these ETA dates? If so, it goes by zip code, so the system is reading your zip code as being the ship to zip code. Since it matches the zip code it is being shipped from, the ETA would naturally show that it would arrive pretty fast.
I'm in the state of Washington. When I look at one of your listings, the ETA is August 16 thru 19th.

Something may be a bit off in the calculation. If I look at one of OP's postings I get the same estimated delivery dates you do but I live in Annandale, VA. which is about 3 miles from OP's destination of Springfield, VA. I understand the addition of the 5 days handling time to the purchase date of 8/11 if I purchased it today but that leaves three days to deliver the package going UPS ground which is the same amount of time to get it to me in Annandale or to you in Yelm, Washington. Something is a bit off here.

You don't get penalized for "late delivery" unless you fail to meet eBay standards shown below. However, if the package does not show up on time it leaves you vulnerable to an INR 24 hours after the estimated delivery date.
You'll be recognized for on-time shipping if tracking shows your item was either shipped within the stated handling time or delivered by the estimated delivery date. If there's no tracking available, we'll check with your buyer. If your buyer confirms the item was delivered on time—you'll be recognized for on-time shipping.
