I have many, many times had to change my items back to “no offers” after ebay has randomly changed my items to “best offer”. Sometimes they email me to let me know and other times they just change it without me knowing. I have a store that I pay for and I just feel this is not right. I have called and they said the “system” detects items not selling within no particular time and randomly changes to BEST OFFER! I am getting completely frustrated with having to change my items back to no offer.
Has anyone else had this problem and do you know how to finally get it rectified with ebay?

All the time. And you don't rectify it. Ebay doesn't care about sellers. Ebay is only going to care about ebay. All they're going to want is FVF which means products moving. Whether you make a profit or not. I wouldn't be surprised if they start clandestinely enrolling listings into Easy Pricing.
As a suggestion, set your listings to Best Offer and auto-decline one penny below your asking price. Of course that won't stop buyers from using the offer backdoor...

You can also do something like raise all your prices and set the best offer minimum to the actual price you want for the item.
I do that on some things because it lets people feel like they got a deal when really they didn't.
