So I know the Paypal/eBay requirement for signature is $750 according to the site, so if I sell an item for $749 am I theoretically okay to ship without signature confirmation and still will be backed by seller protection?

The threshold is for the grand total the buyer pays including any applicable sales tax, so if the buyer has to pay sales tax on it (which most do), than no, you wouldn't be covered

There is no seller protection on eBay. You are taking a big risk selling an expensive item. If the buyer wants to, he can and might issue a false SNAD or INR. Signature conformation or not, eBay will always side with the buyer and you may lose both your money and the item. Cancel the sale and sell it elsewhere.

I would most definitely err on the side of caution and get a signature confirmation. It might not be required, but seller protection is never very reliable, and that is being polite. Personally, I would ask for a signature on anything over a few hundred dollars.

For items sent signature confirmation required I always let the buyer know since someone needs to be at home to sign for it and that way they will track it and plan ahead to make sure they are home.
Nothing is worse then getting a door tag and having to go to the PO, wait in line, etc to pickup your package on an expensive item.

I wouldnt dream of shipping something over a couple hundred bucks w/out signature confirmation. It didnt used to be that way, but in today's environment on today's eBay...... well......
