Unable to see sales history past 90 days???

Every other platform allows you to see your sale history and has easy access to tax information. I'd love to get my data for the year and there's no way I can find to do so. Frustrating to say the least.

You can go to Seller Hub/Payments/All transactions and filter (last 90 days drop-down) to 'Custom'. You'll find it!

The report recommended by @mtgraves7984  is great for locating the details of each transaction.

Seller Hub > Payments > All transactions

https://www.ebay.com/sh/fin/transactions

There is another report in Seller Hub that I like even better because it is geared toward a tax return and will generate a spreadsheet of data:

Seller Hub > Payments > Reports > Transaction reports

https://www.ebay.com/sh/fin/report

Check out the various reports on the Payments tab (and look at the filter options) to determine which one suits your needs.

When eBay sends a 1099K after year-end, the sales included in that report will be based on the settlement date of the buyer's payment (not on the date of the sale or the date of the payout).  That means if you sell an item on Dec 30 and the buyer pays on Jan 2, the sale will appear on the following year's 1099K. If you refund after the buyer has paid, the sale will still appear on the 1099K. Sales tax will not be included in the report. Unpaid sales will not be included on the report.  Refunded sales will appear (inflating your sales numbers) so you will have to deduct the refunds on your own tax return.
