Hi, I set time away on my eBay store starting December 24th until Dec 30th. I made sure to pause the sales, meaning that the listings would be hidden and buyers wouldn't be able to purchase anything until after the 30th. However today December 25th I got an offer from a buyer for one of my items and I am wondering how this is possible?? I read that by pausing sales, your listings wouldn't be visible and therefore no sales can go through. There were no prior offers to this buyer and I had no interaction with them before the time off period began. My other question is that if sales are paused, an offer comes in from a buyer and I accept that offer will there be a negative mark on my account for late shipping because I never changed my 1 day handling time? Please help!

Your items are not being shown in search by eBay, but they may still show up in google searches, and an eBay buyer who has put one of your items into their watchlist can still see it there.
I found some of your listings in google searches, but when I open a listing, I can't do buy now, or send an offer. I can put it in my watchlist, or in my cart, but once it is in my cart, I can't pay for it. There's a red banner that says:
"The seller's store is closed for vacation. Check back later."
In my watchlist, there is a "Make offer" button, but when I click it, it just opens the listing and there's no way to make an offer from the listing.
So, I can confirm that you did set your time away settings correctly, and as far as I can see, buyers can't purchase or make an offer on your listings.
The only thing I can think of, is maybe your potential buyer sent the offer just before you put your listings on time away, or maybe they had already started the process, and completed sending the offer sometime after you went on time away.
If you accept the offer now, you will be expected to ship the item within your set handling time. If you don't, then you would get a late shipping mark on your account. If it's a good sale, and the buyer is willing to wait, then it might be worth it. Otherwise you could reply that you are unable to ship right now, so you have to decline the offer, but that you would be willing to accept the offer if they can wait and send it again when your store is open again.

Lacemaker3 thank you so much for that explanation I really appreciate it. I thought that when you paused sales your listings they would be hidden from everywhere (including google and other websites) but I guess on the eBay website it does only say they are hidden from eBay search. Id love the sale to go through its a high value sale for me, but I don't want a late shipping mark on my account so I think I will just message the buyer like you said and ask that they send the offer again when my store comes back on. Question, is there any way for me to send an offer to a specific buyer if I know their username? I know you can send offers to buyers but when I do I never see the username of who if is going to. Just curious if I can initiate an offer to this specific buyer once my store is turned back on.

You can send an offer to a potential buyer if they have contacted you and sent you an eBay message from the listing. That's the only way to send an offer to a single, specific buyer, unless you are countering an active offer from them. (You couldn't do a counteroffer in this case, because the buyer's offer will probably expire before you are off Time Away.)
