Changing Handling Time on Listings While Away

I'm going to be away for ten days, and need to change my handling time. I keep reading how to do a bulk edit and update it there, but here are the only options in my drop-down box:

The difference in those two bulk editing screens is that @sherylh805  is using Shipping Policies and @buyselljack2016  does not use shipping policies. When using Shipping policies, the editing for shipping details and handling time would occur on the policy page for each shipping policy.
