When I try to choose certain item specifics such as a sleeve length or size, the menu comes up but when I click on the number it fills in something totally different.

Override their number and make sure you add those measurements into the listing data.

Another case of eBay trying to predict your measurements, colors...

It does it with everything.  If I say something is blue with clear details-eBay's system will try to fill in the colors for me, but they are usually wrong.

Thank you for the response. Appreciate your taking the time. I have been doing that . But it does seem to be a glitch and am hoping a tech team can address that for all of us.
