Chrome is my default browser but the EBay doesn’t recognize it and attempts to use safari.

If you are using an iphone, you can go to Screen Time > Content and Privacy Restrictions > Allowed Apps , and unclick safari to stop it from being available to use.

You should be able to use whichever browser you prefer; eBay should work with either.

Is it possible that you inadvertently changed your default browser somehow, or your default was changed when something was updated?

What happens when you open Chrome and go to ebay.com? Can you search and open an item?

If you are using Chrome, and when you tap an eBay browser link, you find eBay opening in another window, is it possible that eBay is actually opening not in Safari but in the eBay app? If so, try tapping and holding that eBay browser link; you should see some options about how eBay links are treated. Choose "do not open in the eBay app" or whichever choice makes the most sense. You choice should be remembered and used the next time you tap an eBay browser link.
