Peculiar Zwilling Henckels whatsit / doohickley / framitz.

Here's an odd Zwilling Henckels gadget.  It seems to be a peeler or zester, but nothing closely resembling it shows up in searches.  The brass thumbscrew allows for the angled piece to moved up, expanding the slit between the knife and the angled piece.  Any guesses would be greatly appreciated.

Thanks to a friend, I'm informed that this is a lahm (lame), used for precision scoring in bread dough.  The slot is for a single-edged razor blade.
