Shipping to a different address then what is in the ebay system

I have two orders this weekend. I can't ship either.

In one case the seller emailed me and wanted me to send to a different address.

eBay has an edit button for the TO address, but if you use it they will not allow you to create a label... It gives you a non-specified error.

The second is an order from the USA to the UK.

The senders address has over 40 char in one of the address lines. When I go to create a label it tells me its too long, but if I try to change it, I find myself in the same situation above. It won't allow me to create a label.

I told the buyers they can change or add addresses in ebay at: Use this link:
https://accountsettings.ebay.com/uas/addresses

But how will that affect their CURRENT order? Is there some way to change the current order ship to address on their end?

Your first buyer should have used the CHANGE link when s/he saw the SHIP TO address during ebay Checkout.  Since s/he did not, and you need to send to the SHIP TO address attached to the payment, you can file a Cancellation due to "Problem with buyer's address".  Buyer receives a refund, and then you relist the item for the buyer to purchase and this time, makes sure the SHIP TO address is correct.

For the second buyer, there are additional lines available for the buyer's address.  What I have done in the past is moved some of the address down to the next line.  If still not enough space, I will abbreviate where possible.  ebay will continue to give an error message, but I just ignore it.  I wish ebay/USPS would increase the length of those address lines.
