Whenever I try to delete one particular item in my buying watch list, I get this:
Congrats! You just listed "Spam and Eggs From the Cow's Perspective (paperback)."
You can check your listing or sell another item
Interestingly, the item that I want to delete does not display the price, because there are listing options, and none of them is selected. I have no idea how that happened.
Needless to say I did not list that item. I'm guessing this is assertion code that is never supposed to appear.
I can't find anywhere to report bugs in eBay.

Not sure about reporting that bug, but others have received the same error message.
Not to worry, it is just a strange error message; you have not listed anything.
There are multiple ways to delete items from a Watch List -- try another method. Or another browser.
You should be able to delete most items from the item page directly.
If an item is out of stock, you can still delete it directly from the Watch List.
If you are using a desktop browser, go to your Watch List or Summary page, select the checkbox to the left of the item on the list, and then use the delete button at the top of the page. Try each page; one may work better for you.
If you are using the eBay app, from Watching, hit the "edit" menu to reveal checkboxes, select the box by the item, then tap the trash icon at the top of the page.

I was able to delete the offending watch list item by using the eBay Android app, but not on the web page in the Firefox browser.
