You can turn off your store listings for up to 30 days at a time. You would have to turn off the "Time Away" every 30 days and then turn it back on again, if you want to be away for several months.
Another option is to use the "Out-of-Stock" feature (for up to 6 months), which is also available to sellers here in the US and to you in the UK:

The out of stock option would be turned on in your account settings. Then use eBay's bulk editor to set all of your listings to zero quantity. They will be hidden from search. They can still be seen by someone who has bookmarked the listing, but the listing will be blocked from offers or purchases.
When you return in a few months, set all of your inventory levels from zero to their original quantities. Then turn off the out-of-stock control in your account settings. The order of events is important. If you do this in the opposite order (disable the out-of-stock control while quantities are still zero), your listings will end.
While ended listings can be relisted within 90 days of ending, they will lose their watchers.
