Handling times??

Need to leave town for a few days, don't want to end all the listings.  I'm a non-Ebay store seller, and everywhere I have looked to change the handling time, seems out of date.  If I use the bulk editor and select a couple of items, then hit edit, all the info I have says there should be a "Handling" link in the drop down.  I don't see a handling link anywhere in my bulk editor. Is there a way to do that in bulk, change handling times from 1 day to 5 days, while out of town for a few days?  Thanks in advance.
