I am relatively new to selling on eBay. After a purchaser finalized and paid for a purchase they have requested overnight shipping. I am happy to accommodate but wonder how I can go about billing for the difference in the cost of the shipping.

The buyer should have communicated this BEFORE they bid. Certainly should have done something before they paid.
It’s a long weekend. Is there even an option for them to get the item ‘overnight’? Wouldn’t it still be a couple days for delivery?
I’m always leery of somebody who wants change after they have finalized the transaction (paid).
If you want to go through with this adjustment, you will have to cancel the transaction and relist with the shipping you have agreed to.
Canceling a transaction can give you, the seller, a defect. Be careful what option you choose when cancelling.
Once you create the new listing with their shipping choice, you risk them not following through. They are not obligated to repurchase after all your efforts.
