Buyer received her correct order, but claims she did not; it was a multiple listing and she received the item that she ordered, but is claiming she received the wrong item. She opened a return request. I was trying to figure out how to deny the request, and inadvertently accepted the return request. I called eBay and they are saying that they cannot shut it down, even though they can see what actually happened. Any ideas here?

Once you accept a return request from a Buyer, that automatically generates a return label to that Buyer. If they never use it, you won't be charged.
If this Buyer opened an Item Not as Described refund request and returns the items and they are exactly as described after all, you will need to issue a full refund. Then report the Buyer for misuse of the Money Back Guarantee and by doing so, eBay typically gives you a credit for the cost of that return label.
The bottom line though is once you approved her request, the process cannot be reversed.
