Buyer Requested I ship more economically without tracking.

I have a buyer that requested I send his item by a cheaper method without cushioning or tracking. I initially agreed, sent a reduced invoice, then retracted the invoice when I realized I would lose all Seller protection by sending his item that way. He has not paid. How do I properly cancel this transaction?
