I know how bids work. My question is how could there be 5 bids in the last 3 seconds while counting down?!?!

Many users only bid at the end of the auction. You should assume that there will be bids that arrive too late for you to respond to and set your maximum bid accordingly.
If you bid our maximum and you were outbid, it was because someone was willing to spend more than your maximum amount.
If you did not bid your maximum and you were willing to bid higher, you should have done so while you had the chance rather than waiting until it was too late.

Each bid is timestamped when received at eBay's servers. If the timestamp is before the end of the last second it is a timely bid. It's not like they can only handle one bid every x seconds.
