Hello, how do I follow ebay rules and not provide my paypal information when a customer has purchased and paid for an item with standard shipping but later decides they want to upgrade. Is there a way thru ebay to charge the customer an additional  $2.50 for Priority Shipping without completely cancelling the order and asking the customer to repurchase with appropriate shipping? I

The only way to accept more money is to give them your paypal email address. I'm not sure why you'd want to hide this...in fact if they have already paid you through paypal, they already have it.

go to paypal and send the customer a invoice for the extra

Yes, just send a PayPal invoice for the additional shipping charge.
