If you pay for a shipping label from  Available Funds that money will not be part of your Payout.

I see you made a sale on the 28th and another on the 30th, if you Payout was on Tuesday it would most likely include the 28th sale but not the one from the 30th (will be included in your next payout).

There are other possibilities but we are just users here and cannot see the details of your account. You can look up the Payout in the Payments tab of the Seller Hub, there is a link to see the details of exactly what was included in the Payout.

The "Payout" can include other charges (debits/credits)

It can include more than 1 sale...

Simply go here:

https://www.ebay.com/sh/fin/payouts

find the line with the payout you are investigating....

and click the "Payout ID"

it will display all the components of that payout.....

It can include 1 sale and a mail label charge....2 sales and a Promoted Listing charge...etc...etc....

Payout includes other fees not included on your Order Earnings breakdown for that item, such as extra listing fees you've paid on other items listed.

Do you use Ebay to print your shipping labels?  That will cause it if you do.

If you have a store, the store fee will come from your money in your MP account every month.

If you use any listing upgrades, you pay for those out of your MP funds too.

If you are also purchasing & elected to be able to spend those funds, that is another possibility.

Because a payout is a net balance calculated at a point in time that is based on more than just order earnings

Mine always match but I have not purchased my shipping labels on eBay in a long time.

I'm not sure brand new sellers get that option, especially since their funds are likely on hold because they are a new seller for a couple weeks or more.
