For days now I've been getting "Oops. Something went wrong. Please try again later." error message every time I try to message a particular user.

In the end I had to message him through a different item's links, as the link through what I bought him just wasn't working, and I've tried countless links

After a certain period of time after a sale, you are no longer able to message a buyer/seller of said item. It's just how eBay is set up to protect buyers/sellers from unwanted communications and to promote more business between you two.
