scheduling a listing

I just listed an item and scheduled it for publication 4 days after christmas.. HAD NO PROBLEMS.. it is scheduled..   Then I wanted to do another item and schedule it for publication about the same time.. NO MATTER WHAT I DO WHEN MAKING THE LISTING do I see the option to schedule it???  If I his list it, it will be published now...DON'T WANT THAT... what am I doing wrong where I was given the option one time and then not the next... Help please so I can go on vacation and have my listing start before we return..
