I received both an email and a message from ebay requesting identity verification with copy of drivers license, passport, bank statement, etc.

Sellers are slowly being transitioned to Managed Payments, and that is a requirement from Adyen, who is the payment processor.  I've been in Managed Payments for 3 years, and I wasn't asked for this information until just a year ago.

Do I have to do this to keep selling on eBay?

Yes.  If you want t continue selling on ebay you must provide this information.
