Ebay does not currently allow the ability to remove followers on your account.
This opens the door to former relationships, people who have restraining orders and other safety risks and privacy invasions to a seller.
Ebay, PLEASE modify your platform to allow "remove all followers" and better still, create a "do not allow others to follow me" option if we choose to manually set it.

"Following" a user does not provide access to any non-public information.
All the information obtained from using the Save Seller feature can be duplicated by bookmarking the seller's profile page and then looking at it. Doing that does not even require an eBay account, and therefor it cannot be blocked by user account or username.
Anyone at all that knows your eBay username can see your public account information. Being able to remove your username from another user's "Saved Seller" list would not change that fact.
If you want privacy, create a new eBay account that has no link to your current account, and then do not share the username with anyone you do not want to know it, and do not list anything identifiable that could be found by someone trying to find you.

While this is true, allowing them to follow you puts them hovering over your account 24x7x365 and that is not cool.
Creating a second account is an option but really inconvenient. Thank you for the suggestion.
