I am concerned about automatic relisting. Some items could potentially be listed for two months when I could be away on vacation. How do I stop automatic relisting?

If you are away on vacation, you can pause the selling of your items by going to the "Time Away" settings. Read more here:

If you don't want to use Time Away for some reason, your only other recourse would be to manually end your listings. eBay fixed price listing have been GTC (Good Till Cancelled) for some time now, and will not end on their own ever, barring policy issues or something like that. Auctions will only relist (for some sellers) up to I think 8 times, but you'd still want to be in charge of how that was handled, and the only way to do it currently is manually.

Time away doesn't work for auctions. I'm not sure if you can do this on the quick listing form but on the form I use there is a box just before the shipping section that I can check or uncheck to automatically relist auctions.
If you don't see the box, look to see if there is a pricing option arrow that you can click on to the right of the Pricing category.
Or, end your actions manually. You can do that if you don't have any bids.
