Hi,
I'm trying to list the books of an incomplete set, as individually books.
I also have hats and t-shirts to sell but don't' want to list them each individually.
Hope i make sense?
Is there a specific template available or do i have to create one?

The feature you are describing is called "variations".

To create a variation listing, you must be using the business listing tool, not the Quick Lister or mobile app.
You must start the listing as a variation, as an existing listing or sell-similar can not be converted to a variation.
Additionally, not all categories support variations, but the book categories should support them.

You can use a spreadsheet to upload to Seller Hub, but you may still need to manually edit the new listings to add photos if you don't have an online image host. Only the URLs for images can be uploaded in a spreadsheet.
One way to use a spreadsheet to list a slew of variations is to first create the listing on the eBay's website, add one variation, and post the listing. Then use a spreadsheet revision to add all of the other variations. The CSV spreadsheet revision would be uploaded to Seller Hub > Reports > Uploads.
