You need to cancel the bid before ending the auction.  Then use SELL SIMILAR, fix the shipping and anything else, and relist.

You can only end an auction that has ever had a bid without a winner if it still has at least 12 hours to run, and eBay charges you a fee to do so (the FVF% for the listing times the highest cancelled bid; waived once per calendar year).

After that you can cancel individual bids and hope nobody else gets a bid in too late for you to cancel it.
