In fact, I also have a question. Why can't I choose multiple styles on the shelves when the item is published? I have a product with a variety of colors.

It does not appear that your concern has anything to do with what the OP came here about.  Actually I'm not even sure if you have a concern or are just here to post off topic stuff.

I think what you need is the "Variations" format, which must be selected when you are setting up the listing.

The "Variations" option isn't available in every category:
