when an item is picked in the store how do I show that the transaction is completed?

You can locate the listing in your ORDERS > Awaiting shipment

Click on the down-arrow and select Mark as shipped (even though you haven't shipped)

Just issue the zero postage invoice, then mark the payment received and item shipped. If You cannot initiate to mark payment received, then ask your buyer to mark it as payment sent and then You should be able to mark it as payment received...
