After running 30 days, what happens to the listing? If it doesn't automatically renew, what happens?

It ends. You'll see it on your Unsold page and you can choose to relist it or not.

Sometimes possible to access or relist a completed listing via links in the eBay emails (that you of course kept 🙂 If not, can sometimes be tracked down via item number or google keyword searches but that is hit and miss.

Prices, shipping costs, dates, item numbers, titles, and my listing notes (which contain a running history of list/relist dates, item weight and shipping options, and price change info) is visible and can be referenced later as needed.
Not sure when eBay actually purges the listing info (if ever), but the "index" to it gets removed. In the case of your unsold items page interface, 60 or 90 days as I said. In the case of google searches by keywords or seller or item number, or direct eBay access by item number you may be able to view the listing (even though it had been "de-indexed"), but you have no link to be able to do anything like relist it - it is only viewable at that point.
I tried one via item number retrieved from an email that ended March 2 and another that ended April 30 with no luck - both are gone. Another one that ended June 6 (2 weeks beyond my 90 day view window) was accessible via item number pulled from an unsold item email, and is relistable.
So the moral of the story is, don't assume the listing will be relistable after 60 (or 90) days or that you will be able to view any of the info after that without some work and a lot of luck (or by using an online listing subscription service for archival or by using Turbo Lister for whatever time it has left before being killed off)
Is it 90 days for Seller Hub? I was thinking that I read somewhere before that if you use Seller Hub your listings do not disappear for 90 days.

Forget the question, I found the answer. It is 90 days for Seller Hub before the unsolds disappear.
