Does eBay remove listings that have been listed for a certain amount of time without selling? I have had multiple listings just disappear with no notification from eBay, they just vanish. I have 2000+ items listed, but after going thru my entire inventory, about 200 of them are no longer available. Again, with no notice from eBay. Wouldn’t you think that we could at least get a notification that an item has been taken down due to being on for too long, or had little traffic, so we could at least be able to remove the item from inventory or relist it?

If the listings disappeared, I would suggest it's a glitch in the system. You should call CS. Did you check your unsold items? I would think the listings went there, and for whatever reason did not get relisted.

When it happens to me, it doesn't show up in my unsold items page.

My experience as well, prior to the forced GTC (March 2019) they removed "stale" listings, I thought it was 16 months but whatever.
Up until March 2019 I used 30 day fixed price and rode the free listing bandwagon so never had any ended. After switching to GTC I have never had any ended by eBay even though about 50% of my listings have been running continuously since 03/19, these listing probably should be put out of their misery but they don't get ended.

No, they don't. I have things that have been listed for years that are still there.

Exactly. If something gets removed, fine. Just send a notification or some type of communication so we are aware or move it to Unsold.
