Hello, I do not have a store and I’m going away for 2 weeks soon. What would be best to do with my listing? Would zero’ing out my stock be a good thing to keep the listing active? Also, if I ended the listing but saved it as a draft/template, would I be able to reinstate it back with all my SKU’s, stock quantities etc, like it was before I ended the listing?

If you end the listings and relist, you'll lose all of your "Sold" count. It's better to zero out your stock quantities. Just be sure to go to your Site Preferences and activate the "Out of stock" option first.

We semi-regularly go away for 3+ weeks at a time. As long as we are staying in the USA I just put a long handling time on my listings. Then I decrease the handling time as we get closer to returning home. I send a note "thank you for your purchase, I just wanted to be sure you saw my extended handling time, your item will ship on such and such a date when we return from vacation". Have never had a cancellation and if people reply at all it is to wish me a good vacation.

I also use an extended handling time and revised it as time passes. I was only contacted once with a question about shipping and when I reminded them of the posted handling time, they were okay with it.

Hi! When i go out of town, i end my listings, then relist upon return. My items are mainly singular, so i don’t need to worry about losing the sales history.
I prefer to end them for several reasons. 1) I don’t have to worry about checking my listings multiple times a day when on vacation, sometimes without wifi or cell phone service. 2) It helps head off possible buyer unhappiness for those who fail to read the listing and therefore remained unaware of the extended handling time. Finally, 3) it is hard to provide good customer service In some cases, such as those who have a question about an item that i cannot answer without being present, such as wanting additional measurements etc.

If your customer buys it, you can't ship it.
Then he opens a Dispute, wins it, and you get a Defect.
Just close the listing(s) . They will go into your Unsold List and stay there for 60 days.
When you get back, or the day before if you are online, you can relist with a click.
In my opinion, losing an 'already sold' number is nothing that a customer will ever notice because Buyer's Don't Read.
And since you have not sold anything yet, the question is moot.
On the other hand, when you relist, especially if you use Sell Similar, you get a little boost in Search as well as appearing in the popular Newly Listed Search.

For 2 weeks, definitely use the out of stock option, I've done it a number of times, views are slow to come for the first day or two but I think eBay sometimes send emails notifying watchers it's available again because I have had a few quick sales.
