I have the following for sale: 7 vtg pins, all different

And some pieces of china, some are the same item, different color, some are the same pattern different pieces 

like milk  and sugar bowl in red and green 

are either of these categories available for variation listing? 

attributes ??????? is that the title of the item of the color or what 
I feel as though I should be able to figure it out

Variation listings are likely not available in the category you're using for the vintage pins, though if you tell us exactly which category you're using, we can check, or you see the list here: https://pages.ebay.com/sellerinformation/sellingresources/multiplevariationslist.html (I'm not 100% sure that list is complete and up to date, but it's a good starting point).

Same may be true for the china.

I would say the pins should be their own listings if they're all different.  Cstomers will be more likely to find what they're looking for, with the image of the actual pin on the search results instead of just one of your pins.

The China, since it's just a different color or pattern, may be more suitable for variations, but it's going to take some work to set up.  There are other members here more experienced with variations that can probably guide you through the setup.

to me variation listings are for something like say bolts.

1/4" X 1.2" Qty 5

1/4" X 1" Qty 5

1/4" X 1 1/2" Qty 5

1/4" X 2" Qty 5

1/4" X 1.2" Qty 10

1/4" X 1" Qty 10

1/4" X 1 1/2" Qty 10

1/4" X 2" Qty 10

Most buyers myself included do not like variation listings for things like you are selling. 

For one thing after a while most of the items will be out of stock.

Doesn't that mean the items are selling?

One of the mistakes, I think sellers make, is to extrapolate their likes/dislikes to everyone.....
