This is going to be my first sale with a local pick up. I'm not sure what to do about the tracking#. I tried just saying local pick up in the tracking number block, but it doesn't recognize it as a valid tracking number. Any suggestions?

The buyer is given a numerical code, or a scannable QR code, that they provide to you on pick-up ... this is what you use to document that the item has been transferred/delivered.

I suppose I should message the customer about that code then. He's not pick the door up until 7/31. And were set up to where we ship and provide tracking number within 2 business days. Thanks for the insight.

You might have to refund and relist with the local pick up option. I don't think you can get the code otherwise. Without proof of delivery from either the code or tracking you risk losing the entire payment.

I have never heard of a code, but things are always changing
I have never had an issue. People who are willing to drive miles / hours to pick something up are not looking to rip you off.
I would suggest keeping communication within eBay with buyer for a record and you could always have the person sign a copy of the packing slip.
