Had a new buyer (zero feedback, joined about 2 weeks ago) puchase something the other day, paid and then requested a cancel-which I did.
I then get the following PM thru eBay:

I want to cancel this order! However I would like to purchase it, I want to purchase it with my gift cards from ebay, If you could cancel it and send me the same offer for it I definitely want it. I am new to ebay and this is my first purchase, sorry for the trouble.

No. Whether it's a scam or not, just no.
Okay--maybe that's a little harsh, and maybe I need another cup of coffee, but it just has "run" written all over it.
I guess it might work out, but . . .

I would cancel and relist, then send them the new item number so they could use their gift cards.
Send the item number through an Ebay message.
If they rebuy, fine, if they don't that's fine also.

Just FIY buyers can most definitely use their ebay gift cards on the ebay payments page, they may have to select "Paypal credit" in order to do so but from the seller's end there is no difference, it's paid for and you can ship it.
I would not advise taking payment any other way.
