I just started listing again and my listings just started to show. Its been about 72 hours.
I checked Buy it Now for all listings but I noticed when they went live all are marked Make an Offer. I had to go edit them all.
Is this a thing here and I have to go back and edit my listings?

None of your listings show “make offer.”

You'll have to check all your listings.
Ebay likes to have best offer checked as default and you have to turn it off.

The "thing" is that eBay may have set a default for Best Offer so when creating listings it is imperative that you make sure that none of these default settings settings are turned on and if you find them deselect.
This is especially true for the Quick listing tool which is what is generally offered to new or infrequent sellers.

That is the problem, I had all my listing checked to Buy it Now but when they went live were make offer. I had to go edit them.

Right, Ebay likes to add best offer to listings.
Even if you have it turned off, Ebay will still add it.

Best Offer is an option for any type of listing, Fixed Price or Auction, it is primarily used for Fixed Price listings.
As a test I started to create a listing under this posting id that has never listed or sold a single item, down in the pricing section I see that the Best Offer option has been auto-enabled.
