why all new listings are not automatically made "mobile friendly" ??

None that I can think of. 

I use templates that already have the "mobile friendly" set up so I don't have to remember to do it. In my case, it is automatic.

Probably for the opposite of this reason. There are a lot of templates that aren't and modifying them would mess them up.
