Ebay would be doing that. You need to ship within your stated handling time. if your buyer has paid, you need to ship.
Next time you notice this happening, tell your buyer NOT to pay until all their auctions have completed. Then you send them an invoice and they pay.
If you hold this current order past your handling time, you will hurt your seller statistics.

If you are shipping this Internationally and direct (USPS etc) any late shipping will only affect your Global metrics. As long as your US metrics are good then the global is basically irrelevant.
