So I put up a car seat for $30 plus shipping witch came out to be $5 but when I showed up at the post office the real coast for shipping to CA is between $70-$120

Appears you calculated shipping cost incorrectly

What method of shipping did you offer? I'm guessing you selected the wrong one?
What is the weight of the package to be shipped?
What are the dimensions of the package?

Should have been local pickup only.

Your listing was set up to calculate the postage cost for a First Class package weighing 5 - 8 ounces. It's possible that eBay filled this in for you based on category averages, since you listed your item in the subcategory for "Car seat accessories" rather than for car seats.
You have to choose whether to absorb this enormous shipping cost, or just tell the buyer that you have to cancel the transaction. I recommend the latter approach even though it will put a defect point on your account.

I'm guessing you didn't fill in the package dimensions or the weigh correctly because I can tell you based on experience that you cannot ship a car seat from my house to across the street for $5 let alone across the country.
You'll have to eat the cost yourself or see if the buyer will pay the additional fees (highly unlikely). I can tell you I've miscalculated before and I ate the fees myself.

Sellers cannot bill buyers for shipping errors after the fact.
So sorry you are facing this costly dilemma. Getting shipping wrong is almost a rite of passage for new sellers.
You chose First Class mail for your carseat. The limit for that level of postage is 13 oz. or 15 oz. depending where you purchase your postage. Obviously the package weighs substantially more than that.
It is no help for this situation, but in the next, package up and weigh your items before listing to acquire the actual dimensions to input into the listing form. If you use calculated shipping, eBay automatically calculates the transit cost by location for each shopper.
As for this dilemma, you are obligated to ship the item and eat the extra costs of the error. Or you cancel the transaction and take the hit on your seller metrics and receive a defect. Under these circumstances, it would be unethical to cancel with Problem with Address.

You can't sell a used car seat here.
https://www.ebay.com/help/policies/prohibited-restricted-items/product-safety-policy?id=4300
"Eligible sellers can list child car safety seats. All car seats must meet Federal Motor Vehicle Safety Standard (FMVSS) No. 213. Sellers must state in the listing that the car seat meets this standard. Used car seats are not allowed"

Good call sweet tea, we can't even take donated car seats at the thrift.

Around here (in Chicago) you cant even donate one. No used car seats - cribs - strollers.
I would just find something else to sell. Sorry.

Others already covered the issues with your listing and the shipping information you put in when you listed it. Given the issues surrounding the selling of a car seat I would cancel the order using out of stock and take the hit. There are potentially some liability issues here.
As for shipping when you are listing items as others noted make sure the dimensions, weight and type of service are correct when you post it. If you are not going to purchase your shipping labels through eBay, which are discounted, rather than taking it to the post office and paying full price use another third party shipping service like Pirate Ship to purchase and print your labels then upload the tracking information into the order.

It looks like that listing has been taken down.
Perhaps a blessing in disguise.

When I click on it I get the "we looked everywhere" error message.

Your feedback that you left the buyer also violated ebay policy
I strongly suggest that you read ebay policies before listing any other item.
Trying to list prohibited items will get your account shut down......Trying to avoid detection by choosing the wrong category to get around the prohibited policy is not okay..
