Just switched to eBay store, now my handling time is same day, how do I fix this?

You can change your handling time in your business policies.

I have never heard of handling times changing because of a store subscription. That's a new one. 
I looked at a few of our listings, your handling time is 3 days.

I looked at a few of your listings and found one same day, but all the others I checked were 3 day.  Can you do a bulk edit to make sure they are all the same?   I'm curious, did you previously have no store with that many listings?  If so, I bet that was costly.
