Is this fair for ebay to ding me when I canceled a sell when they allowed a sale of a item that had just sold out? Item showed 0 of 0 left and they allowed a buyer to buy the item.

It shows 0 left, because your buyer bought the last one.

While probably not fair eBay is infamous for it's "glitches".

Click on the 'help & contact’ button located at the top and bottom of ebay pages and follow the prompts

On chat: type in ’agent’ to get a live person instead of a bot
AND-OR
Click on receive a call back: depending on how busy they are will depend on length of time for your call back
Make sure your phone will not block the call back

This is a known ebay glitch, do some research on this message board and you will see this issue is probably here to stay, they can't/won't fix it.
we had the same experience multiple times, ebay allows items out of stock to be sold.
Next time contact your buyer and present this ebay glitch and offer to cancel and refund due to "buyer request" you will not get dinged.
You should not get punishment for the venue incompetence.

hold a few back for problems to begin with, and list such individually when the stock is out....
