How do I put on all my listings at once that I don’t ship to Hawaii or Puerto Rico

Do you use business policies? If so, you can edit the exclusion list in those policies.

Go to your "Shipping policy" page.
Click "Edit" on your default Shipping policy that applied on your listings.
At the page bottom, click "Edit exclusion list", choose places that you want to exclude.
